Blue Cheese Steak

A great combination of steak with blue cheese.
INGREDIENTS
3 pounds tenderloin beef
3/4 pound sliced bacon
1/2 cup teriyaki sauce
1/2 cup red wine
1 tbsp balsamic vinegar
6 cloves roasted garlic
2 green onions, minced
1 tbsp hickory salt
Fresh black pepper to taste
4 ounces blue cheese, crumbled
1/2 cup mayonnaise
2/3 cup sour cream
1 1/2 tsp Worcestershire sauce
METHODS
1. Combine, teriyaki sauce, red wine& balsamic vinegar, garlic and green onion.
2. Pour mixture over beef and allow to marinate for at least 30 minutes turning at least once.
3. Wrap tenderloin in bacon, securing with toothpick if needed.
4. Place tenderloin on hot grill for 15 minutes, turning 4 times move to medium grill and cook for 30 to 40 minutes longer, turning 4 times, removing at 130 degrees internal temp.
5. Salt and pepper beef at this time, if desired.
6. Allow to set for approximately 5 to 10 minutes before slicing. Be sure to leave bacon on when slicing.
7. In a saucepan over low heat, combine the bleu cheese, mayo, sour cream and Worcestershire sauce.
8. Stir until smooth and creamy and serve over the sliced tenderloin.
9. Save the marinade, mince some roasted garlic and added a little more of each ingredient to the marinade.
10. Put it in a saucepan with a sprig of rosemary and small red potatoes and let them simmer while the meal cooked.
