Butter Chicken

An aromatic chicken dish that best to serve with rice and salad.
INGREDIENTS
400 grams / 14 oz of boneless chicken thighs or breasts; skinless
3 tbsp of butter
1 large onion
1/4 tsp cinnamon
2 tsp crushed garlic
2 tsp crushed ginger
1/2 tsp ground turmeric
1 tsp cumin
1 tsp chilli powder
1 tbsp coriander
1 tbsp tomato paste
1/2 cup unsweetened yoghurt
1/4 cup ground almonds
1 (8 oz) can whole peeled tomatoes with juice
METHODS
1. Trim and cut the chicken into small cubes, cover and put aside.
2. Slice the onions into thin wedges.
3. Heat a large saucepan or frying pan and melt 2 to 3 tablespoons of butter until it turns frothy.
4. Add the onions and the cinnamon to the pan and fry lightly.
5. When the onions are soft stir in the crushed garlic and ginger.
6. Add the turmeric, chilli and coriander, and saute over a medium heat.
7. Add the cubed chicken. Saute and stirring constantly until the chicken cubes become tender.
8. Pour in the ground almonds, tomatoes and tomato paste. Mix thoroughly.
9. Cover and simmer for 20 to 30 minutes.
10. Add the yoghurt and heat through.
11. Serve with rice and salad.
