Crunchy Coconut Oatmeal Cookie

A fabulous cookie with tropical coconut taste. Oatmeal is good for health.
INGREDIENTS
1 cup all purpose flour
1/2 cup unsalted butter
1/2 cup brown sugar
3/4 cup oatmeal flakes
1/2 cup shredded coconut
1 egg
1 tsp vanilla essence
1/8 tsp baking soda
1 tsp baking powder
pinch of salf
METHODS
1. Preheat oven to 325F. Grease a cookie sheet.
2. In a large bowl, cream bowl with butter. Beating constantly, add brown sugar, egg, coconut and oatmeal. Sift together remaining ingredients and add to oatmeal mixture; mix well.
3. Drop spoonful of batter onto cookie sheet, 2 inches apart. Flatten lightly with a fork. Bake 12 to 15 minutes or until colour turns brown.
